The FRITSCH CTR system is the first choice for bakeries wanting to produce coiled products from a dough sheet. As a croissant machine, the CTR perfectly handles the production of filled and unfilled croissants. However, it is more than just a croissant line. It also produces salt sticks, coiled Danish products or baguettes in large quantities. For these applications coiling systems perfectly adapted to the product requirements can also be used.
With up to 20 strokes per minute, the patented punching and turning device provides you with highest capacity, maintaining a high cutting and positioning accuracy at the same time. The dough pieces are processed in one single step ensuring extremely gentle dough treatment. This represents the basis for coiled products of highest quality. Due to the punching process nearly any shape is possible.
Due to its modular design the CTR can be upgraded in a flexible way. For example, different filling units, longer exit tables and also a digital control with storage space for 100 products can be integrated without any problem.
CSV compact for filled & unfilled croissants
The CSV compact offers you maximum flexibility: you can coil filled and unfilled products with a single system. This shortens the time needed to change the components and also saves valuable space. The CSV compact fixes the dough pieces from below with a vacuum so that a precise coiling process and perfect coiling results are guaranteed every time. The exchangeable coiling cassettes offer a high level of flexibility for different products.
