IMPRESSA bread

The IMPRESSA bread offers the production of large quantities of artisan bread products to be produced efficiently in high quality. The line has been specially developed to process soft doughs.

The industrial line IMPRESSA bread is characterised by its high output and extremely gentle handling of the dough. The FRITSCH SoftProcessing technology ensures a gentle treatment of the dough from the very beginning to the very end of the entire process. In addition to the gentle sheeting of the dough using the established FRITSCH satellite technology, other components play their part as well in the SoftProcessing effort: the same level dough transfer tools, for example, that perform their task without producing the usual disturbing pull and push stresses. Or the synchronized guillotine that avoids any unnecessary stretching or jamming of the dough. These are some of the methods we employ along the process chain to avoid wherever possible any unnecessary tension or excessive density in the dough. The result? An outstanding product quality - and this is always the measure of all things at FRITSCH.

The IMPRESSA bread is modular and flexible in structure, which means it can be adapted precisely to the respective customer’s requirements. As a result, every customer can utilise the line with maximum flexibility and produce the full range of top-quality artisan bread products. With its open design and removable modules, the IMPRESSA bread is readily accessible, making it quick and easy to clean. The hygienic design of individual components includes consistent use of smooth surfaces and rounded corners where no dirt can accumulate. Fold-up knife edges, like those on the infeed table of the calibrating head for example, ensure good accessibility even in relatively tight spaces. On the so-called “omega drives”, the belt can be completely relaxed in a matter of seconds, which makes cleaning under belts a quick and easy process as well.

The IMPRESSA bread in detail

The dough sheeter SDS is specially designed for processing soft doughs. It uses fold-up conveyor belts to flour the dough sheet from all sides, thereby eliminating the need to use any oil when rolling out the dough. A sensor monitors how much dough is in the hopper. If it falls below a certain amount, new dough is brought in on another conveyor belt. This allows for greater precision and more even weight distribution when producing the dough sheet.

Next, the dough is rolled out gently by the Soft Dough Roller. The new technology produces a highly uniform dough sheet with extremely well-defined edges and without shearing forces or the use of separating agents. This reduces scrap dough to a minimum throughout the rest of the process.

The conveyor belt table of the Soft Dough Sheeter (SDS) and the Soft Dough Roller (SDR) can be removed from the line in a few simple steps and taken to the washing area for thorough cleaning.

We offer different types of guillotines depending on the application. Our high-performance guillotine achieves a performance of up to 150 strokes/min. Their reciprocating or synchronized movement prevents any unnecessary compressing or stretching of the dough and guarantees clean separation of the dough pieces.

With our high-performance combination guillotine, a decoration can be cut into the dough pieces using special punching tools. Thus, you can bring your ideas quickly and easily to life for an unlimited variety of products. Naturally, you can also punch out all kinds of product shapes.

The Round Moulder (BRWI) is FRITSCH’s long-standing, trusted solution when it comes to the optimal shaping of round loaves and bread rolls. This specialized machine for processing soft, pre-proofed doughs comes in widths of 900, 1100, and 1300 millimetres and is extremely efficient at processing dough pieces of all different sizes. The BRWI guarantees a smooth production from 30 gram snack rolls to 1,000 gram heavy loaves. For large products, you have the option to equip the round moulder with pneumatic tools. Controlling the tools with compressed air ensures uniform poring of the dough. It also allows working of very high, rounded surfaces. Our machines furthermore let you freely determine the moulding speed and intensity, or in other words the moulding radius, the moulding time, and even the moulding pressure. The many parameters can thus be individually set and adapted optimally to each product you wish to make.

Easy tool changes guarantee extra flexibility in production: thanks to the quick-change mechanisms on our round moulder, retooling the systems goes very fast. That way, customers can produce the greatest variety of breads and rolls in the shortest of time on one and the same line.

With the baguette moulder, the cut dough pieces are first coiled and then moulded into a long shape by a counter-running moulding belt. The coiling mat is integrated in the head of the pressing unit and its length can be easily adjusted by winding or unwinding it. With the availability of different moulding units, our lines ensure efficient production of diverse baguette products, including those with pointed baguette ends. For reproducible results, the moulding bar setting is limited by coded moulding bar holders. For changing the moulding bars and for easy cleaning, the baguette moulder can be opened with a simple handle for easy access.

With the Product Decoration Unit (PDU), decoration patterns can be printed or cut into the surface of products. The system is highly flexible, and the decor can be pressed as well as cut not only on round-moulded products but also on long-moulded ones. In addition to moulded bread rolls, the dough pieces can also be punched or cut out, then decorated with a pattern. An integrated camera system ensures that the decor is applied exactly in the centre of the product.

The system’s possibilities with respect to product weight are also almost unlimited. In addition to its flexibility, the new component is particularly convincing by its high product quality. To maintain the dough’s sensitive structures, the IMPRESSA bread’s gentle sheeting line produces only minimal stress during the entire production process. This allows for processing of doughs with a high dough yield without a proofer for intermediate relaxation.

Thanks to the modular design of the IMPRESSA bread, a huge variety of different products can be produced without having to prolong the line. The baguette moulder, for example, could be quickly and easily swapped out for the newly developed Dough Twisting Unit (DTU). This unit produces twisted bread rolls reliably and in industrial quantities with a capacity of 60 strokes per minute and row. Before this module existed, such products could only be produced by hand.

Intuitive use of our lines is important to you as you need to be able to react quickly to changes in the market. Therefore, it is a must for us. The IMPRESSA bread is controlled based on output. This means that only the required hourly output needs to be entered on the display. The system then calculates all the parameters required to achieve this result. The software checks whether the desired performance change is even feasible. The drives coordinate with each other according to output and, if necessary, automatically regulate themselves to the capacity of the smallest drive.

For greater clarity and user-friendliness, the entire line is displayed on the control panel. This facilitates orientation on the line and enables the user to quickly access the required operating level.
