MULTIVAC wins packaging prize with Cooling@Packing

Greater freshness and longer shelf life, savings in energy costs and space requirements, as well as increased production capacity. This is what characterizes the new Cooling@Packing system from MULTIVAC. An innovation for cooling bakery products in a packaging machine, which has now been awarded the German Packaging Prize. The award is the largest European exhibition of innovations in the packaging sector.

“We are delighted to receive this award for our product innovation in the bakery product segment,” says Dr. Tobias Richter, Managing Director (CSO) of the MULTIVAC Group. “Among other things, the solution reduces energy costs and space consumption - and the recognition from the jury confirms our commitment to continuously developing pioneering new technologies, which help our customers to produce more efficiently and sustainably.”

The Cooling@Packing system is a vacuum application for cooling baked goods that integrates the cooling process into a thermoforming packaging machine. This allows baked goods to be packaged immediately after baking, resulting in a longer product shelf life and greater freshness.

The conventional cooling process for baked goods is carried out using cooling spirals at ambient temperature or in separate cooling tunnels. Both approaches require a lot of space in the production facilities and high investment costs. There is also the risk of product contamination with slow cooling processes.

With the MULTIVAC Cooling@Packing system, bakery products, such as baguettes, breads or cookies, can now be placed hygienically directly from the oven into the open packs at the loading station of a thermoforming packaging machine by means of loading robots. In the packaging machine, the baked goods are cooled from 95°C to around 30°C within a few seconds by vacuuming the chambers. The cooling is caused by the evaporation energy released during the vacuuming of the baked goods by the evaporation of the product's own moisture.
