Irrespective of the type of dough that you would like to process, the FRITSCH MULTIFLEX L 700 combines the advantages of a gentle punching and turning process with the variety of shapes available with intelligent punching and cutting technology in a single production line. A number of specialised accessories allows the MULTIFLEX L 700 to be configured for almost every product, range and operating process.

The high-performance guillotine ensures a high output. The travelling movement ensures that the dough pieces are cut accurately and maintain their shape. Separate tables prevent soft dough pieces from sticking together. In croissant production, the triangles are punched and turned in a single process step, as is usual at FRITSCH. This process is extremely gentle on the dough and ensures a high level of accuracy in terms of shape, position and weight.

The effort needed to clean the MULTIFLEX L 700 is reduced to a minimum by its coated surfaces of all components. This is additionally supported by easy access and covers that can be opened wide. Product changeover is just as efficient: all the components can be quickly replaced without any special tools thanks to the MULTIFLEX L 700's modular construction.

In the simplest case, the MULTIFLEX L 700 is fed using a ROLLFIX. However, dough feeding can of course also be automated. In this case, a continuous dough sheet is produced using a FRITSCH DOUGHLINER 700 or LAMINATOR 700. In the case of a combination of sheeting line and MULTIFLEX L 700, we speak of a PROGRESSA prime.

The MULTIFLEX L 700 in detail

When feeding the line with a dough spool, the calibrating head homogenises the dough sheet (especially from one spool to the next) and provides exact weight distribution. The dough loop control ensures that the dough sheet passes through the calibrating head without tension or stretching (in the infeed with electromagnetic dough scale and at the outfeed with light sensor).

Our filling units fill your products evenly and precisely, in the correct spot or continuously. Whether the fillings are liquid, creamy, chunky, or thready in nature, we have a suitable solution for you. We offer you a filling unit with intake rollers for filling masses with limited flowability. On the other hand, fillings containing fruit pieces are gently applied with an upstream solid particle application system. A large variety of filling nozzles and application systems satisfies every possible requirement. The number of filling rows can be flexibly adjusted to the number of product rows due to individually detachable pistons. Of course, all our filling units can also be washed down.

The high-performance guillotine of the MULTIFLEX L 700 punches and turns the dough pieces in a single process step. This ensures a high degree of accuracy in terms of shape, position and weight. Thanks to this gentle dough processing system, the shapes are precisely punched and practically tension-free. The guillotine achieves an output of 30 strokes/min when punching and turning. For cross-cutting, the servo-driven guillotine moves synchronously. This ensures that the dough pieces are cut precisely and maintain their shape. They can also be pressed if required. The MULTIFLEX L 700 achieves an output of 100 strokes/min for cross-cutting and 25 strokes/min for pressing.

A croissant defines itself by its taste; however, its appearance also plays a major role in the development of the overall impression. Our coiling units will provide you with numerous options to lend your coiled products an individualized structure.

Coiling unit CCH Wickler - for loosely coiled and contoured croissants

The FRITSCH CCH coiler is gentle on the dough and reliably coils consistent, contoured, unfilled croissants. The defined infeed of the triangles with the help of the pressing roller guarantees that the coils are extremely uniform. The triangles can also be long-rolled thanks to the pressing roller, which influences the number of coils.

Coiling unit CRH - for tightly coiled croissants, crescents or sticks

Thanks to its flexibly adjustable coiling belts, the CRH coiler is ideal for the production of tightly coiled, unfilled products. Croissants, crescents, bread sticks, pretzel sticks and baguette rolls can be managed professionally with its assistance. The roller gap to determine the number of coils and the coiling belts for the type of coiling can be flexibly and reproducibly set.

CSV compact - for filled and unfilled croissants

The CSV compact offers you maximum flexibility: you can coil filled and unfilled products with a single system. This shortens the time needed to change the components and also saves valuable space. The CSV compact fixes the dough pieces from below with a vacuum so that a precise coiling process and perfect coiling results are guaranteed every time. The exchangeable coiling cassettes offer a high level of flexibility for different products.

Intuitive use of our lines is important to you as you need to be able to react quickly to changes in the market. Therefore, it is a must for us. The MULTIFLEX L 700 is controlled based on output. This means that only the required hourly output needs to be entered on the display. The system then calculates all the parameters required to achieve this result. For greater clarity and user-friendliness, the entire line is displayed on the control panel. This facilitates orientation on the line and enables the user to quickly access the required operating level.
